The three-year-old filly, trained by Kiaran McLaughlin and partnered by Joel Rosario, raced a close third and was then settled fourth, tucking in behind the leaders before the first bend.
Heath set a steady pace, with the first quarter in 25.10s and the initial half-mile in 49.25s.
Sentiero Italia was switched out widest of all entering the straight, when still fourth of the five runners.
The daughter of Medaglia d'Oro threw down a strong challenge, going second and then passing the leader Miss Temple City well inside the final furlong for an excellent length and a quarter victory in 1m 49.25s on firm turf.
Kiaran McLaughlin commented: "That was a very nice success for Sentiero Italia.
"She ran a super race, had a great trip and Joel rode her very well. We said to Joel whatever decision you make (about how to ride her) would be the right one.
"She is a very nice filly with a good turn of foot. It was great to win a Grade Two and the probable target is the Grade One Queen Elizabeth II Stakes (1m 1f) at Keeneland in October (10).
